Both your methods are superb. I lean towards filet mignon, topped with herb butter for extra flavor. My seasoning is simple salt, pepper, and thyme.
A tip: let the steak rest post-grill to lock in juices. Cover for 5-10 minutes. For smoky taste, add soaked apple or cherry wood chips to the grill.
