Good morning all,
Hope your week is starting off smoothly. With cooler evenings settling in, I have been spending more time around the grill and wanted to share how I have been choosing and preparing steaks lately. I recently tried a low-and-slow method for a ribeye and finished it over higher heat, which gave a deep brown surface and a tender center.
I would really like to hear which cuts you tend to reach for, how you season them, and any steps you use to guide the cooking so the center turns out just the way you like it. Whether you cook outside all the time or mostly indoors, any ideas are welcome.

Nice to hear from you. That ribeye method sounds excellent. I usually lean toward sirloin when I am cooking for a few people. It has a hearty flavor and stays fairly lean, which everyone here seems to enjoy.
For seasoning, I keep it straightforward with salt, cracked pepper, garlic powder, and just a little smoked paprika. Letting the steak sit on the counter for a short time before it hits the heat has helped me cook it more evenly. To build those crosshatch marks, I start over higher heat for a couple of minutes on each side, then slide it to a gentler zone until it reaches the center color I want.
If anyone has suggestions for bringing out more depth of flavor on a standard grill, I would love to hear them.

I like both of your approaches. When I have guests over, I often serve filet mignon because the texture is very soft and it plates nicely. I sometimes finish it with a small pat of herb butter to add a richer finish. For seasoning, I usually rely on sea salt, fresh black pepper, and a bit of chopped thyme.
One thing that has helped me is giving the steak a short resting period once it comes off the heat. I usually cover it loosely and leave it alone for several minutes so the juices can settle, which keeps each bite
