Thanks for starting this thread. That pan-to-oven method for ribeye sounds excellent. I usually lean toward sirloin because it balances tenderness with a fuller flavor while still staying fairly lean.
My usual mix is coarse salt, cracked pepper, garlic powder, and a light touch of smoked paprika. I like to set the steak out for around half an hour so it’s not too cold when it hits the heat. For distinct grill lines, I begin over high heat for a short sear on each side, then move the steak to a slightly cooler spot until it reaches the doneness I’m aiming for.
If anyone has suggestions for building more depth of flavor or subtle smoke notes, I’d be interested.
