Thanks for starting this conversation. That slow‐heat approach on ribeye sounds excellent. I usually reach for sirloin when I’m cooking for a few people because it has a nice balance of flavor and leanness.
For seasoning, I keep it very straightforward with salt, cracked pepper, a light shake of garlic powder, and just a hint of smoked paprika. Letting the steak sit on the counter for a short time before it hits the grill seems to help it cook more evenly. To get clean grill marks, I start over higher heat for a couple of minutes per side and then move the steak to a slightly cooler zone to finish until it reaches the level I like.
If anyone has suggestions for building a bit more gentle smoke character or other subtle flavor layers, I’d love to try them.

I often finish it with a small spoon of herb butter that melts over the top right after cooking. My base seasoning is sea salt, freshly ground pepper, and a touch of fresh thyme or rosemary.
One thing that has made a big difference for me is giving the steak time to rest once it comes off the heat. I place it on a warm plate, cover it loosely with foil, and leave it alone for several minutes before slicing. That pause seems to keep more juices in the meat instead of on the cutting board.
For a gentle smoky note, I like using a handful of fruitwood chips that have soaked briefly in water before going onto the grill. It adds a pleasant aroma while still letting the natural flavor of the steak stand out.
