Good morning everyone,
Hope your week is off to a smooth start. With cooler evenings setting in, I’ve been spending more time by the grill and wanted to compare notes on steak choices and cooking styles. Lately I’ve been using a slow warm-up in the oven followed by a hot cast‐iron finish on ribeye, which has given me a deep crust and a tender middle.
I’d really like to hear which cuts you reach for most often, how you season them, and any small steps you take to reach the doneness you like. Whether you’ve been doing this for years or are just getting into it, any ideas would be great to learn from.

Hi Emma and all,
Nice to hear from you. That ribeye method sounds excellent. I usually lean toward sirloin because it has a firm bite and solid flavor without being too heavy.
For seasoning, I keep it simple with salt, cracked pepper, garlic powder, and a light shake of smoked paprika. I let the steak sit out for a short while so it isn’t cold when it hits the heat, which helps it cook more evenly. To get clear grill lines, I start with a very hot grate for a short sear on each side, then move it to a slightly cooler area until it reaches the level I’m aiming for.
If anyone has tricks for adding more depth of flavor on a standard gas grill, I’d love to hear them.

I like both of your ideas. My usual choice is filet mignon because it’s so soft and consistent. I often finish it with a small spoonful of herb butter to give it a richer finish. My base seasoning is sea salt, freshly ground pepper, and a bit of fresh thyme.
One habit that has really helped me is letting the steak rest before serving. I place it on a warm plate and cover it loosely for several minutes so the juices stay inside when I slice it.
For a gentle smoky note, I add a small handful of soaked apple or cherry wood chips to the grill. It gives a subtle aroma that complements the meat without overpowering it.
