Hey, I finally got around to trying that sourdough starter recipe you sent =
me last month. It took a few tries to get it right - the first batch was wa=
y too wet and I ended up with something closer to pancake batter than bread=
 dough. But the third attempt came out beautifully. The crust had that perf=
ect crackle when I tapped it and the inside was soft with those lovely irre=
gular air pockets. I added a little rosemary and sea salt on top before bak=
ing and it filled the whole kitchen with that warm yeasty smell. My neighbo=
r stopped by and asked if I was running a bakery out of my apartment. Anywa=
y, I sliced it up and had it with some good butter and a bowl of tomato sou=
p. It felt like such a small victory but honestly it made my whole week. Ne=
xt time I want to try a whole wheat version or maybe add some olives and su=

Hey, have you been watching that new documentary series about ocean explora=
tion? I started it last week and I'm completely hooked. The footage they ca=
ptured of those deep sea vents with all the weird bioluminescent creatures =
is absolutely mesmerizing. I had no idea there were entire ecosystems thriv=
ing in complete darkness at those pressures. The episode about the Mariana =
Trench gave me chills. They showed these ghostly pale fish with transparent=
 heads and jellyfish that look like alien spaceships. It makes you realize =
how little we still know about our own planet. I watched it with my nephew =
and he kept asking if we could build a submarine in the garage. I told him =
maybe we start with a model kit first and work our way up. The cinematograp=
hy is stunning too - every frame looks like a painting. I think you would r=
eally enjoy the second episode about coral regeneration. They follow a team=
 of marine biologists who are literally planting new reefs by hand. It's ho=
