I think the key is letting it rest properly before serving. I usually aim for about ten minutes depending on the thickness. The carryover cooking continues during that time so pulling it a few degrees early helps avoid drying it out. I have been keeping the seasoning simple lately just salt and pepper applied about forty minutes before cooking. The texture has been much better since I started paying attention to the resting step. For vegetables I have been roasting them separately at a higher temperature so they get some color without steaming in the pan. The timing takes some coordination but the final plate comes together well. Let me know if you want specifics on the temperatures I track for different doneness levels. I have been using a digital thermometer to monitor things more precisely and it has made a noticeable difference. The carryover time also depends on the size and thickness so I adjust accordingly.

I went with mostly native species for the border because they handle the local conditions better. I spent last weekend turning over the soil and mixing in some compost before laying down mulch. The garden center suggested black eyed susans and coneflowers for the full sun areas along with some shade tolerant options for the north side. There was more preparation involved than I expected but the beds look well defined now. I still need to set up a drip line for consistent watering during the hotter weeks. If the weather cooperates I should have everything in place by early next month. Let me know if you want a copy of the planting layout I sketched out. The native varieties should attract more pollinators and require less maintenance overall.
