hey, i finally got around to trying that sourdough starter recipe you sent =
me last month. it took a couple of tries because my kitchen is too cold and=
 the first batch just sat there doing nothing. but the second time i kept i=
t near the water heater closet and it came to life after about five days. t=
he first loaf was a little dense but the second one had those nice airy poc=
kets you see in bakery photos. i think i overproofed the third one though a=
nd it collapsed a bit in the oven. ive been feeding the starter every morni=
ng now and it smells really tangy and good. my neighbor asked for some so i=
 split it into a second jar and now shes baking too. were going to do a lit=
tle bake-off next weekend just for fun. nothing serious just comparing crum=
b and crust. ive been using a mix of bread flour and whole wheat and it giv=
es it a nice nutty flavor. i think next time i might try adding some rye fl=
our to see what happens. let me know if you want some starter i can dry som=

oh i finally watched that documentary you recommended last night the one ab=
out the deep sea vent ecosystems. honestly i was expecting it to be kind of=
 slow but it was completely fascinating. the way those tube worms and crabs=
 survive in complete darkness with all that pressure and toxicity is wild. =
i had no idea that chemosynthesis was even a thing before that. the footage=
 they got of the vents was incredible those towering black smoker chimneys =
pumping out superheated water. the narrator said some of those microbial co=
mmunities might be the oldest life forms on earth which really puts things =
in perspective. my kids watched the first twenty minutes with me and then g=
ot bored and wandered off but my wife and i ended up watching the whole thi=
ng. she kept asking questions about whether anything could live in the hydr=
othermal vents in yellowstone which i dont think is quite the same thing bu=
t i dont know enough to say for sure. anyway it made me want to read more a=
bout extremophiles and maybe pick up a book about it. let me know if you ha=
ve any other recommendations along those lines im on a bit of a roll with n=
ature docs now.
