Thanks for asking about the grilling technique I mentioned last weekend. I have been experimenting with a two-zone fire on my charcoal kettle and it really makes a difference for thicker cuts. You set all the coals on one side only, then sear directly over them for about 90 seconds per side. After that you move the meat to the cooler side and close the lid with the vents halfway open. Let it rest there until it reaches about 10 degrees below your target temperature. The carryover will bring it up while it rests. I tried this with a couple of strip steaks last Thursday and the crust was fantastic while the inside stayed perfectly medium-rare. The key is not rushing the indirect stage because that is where the connective tissue breaks down. Let me know if you want me to write down the exact timing I used for different thicknesses.

I saw your note about the garden planning for next spring and wanted to share what worked well for us this year. We put in three raised beds about four feet by eight feet each and filled them with a mix of topsoil and compost from the local nursery. Tomatoes went into the first bed, peppers and eggplant into the second, and the third we used for bush beans and zucchini. The beans ended up producing way more than we expected even with just twelve plants. We planted everything after the last frost date in early May and started harvesting tomatoes by mid July. One thing I would adjust is staking the tomatoes earlier because they got a bit unruly before we added cages. If you want to try something similar I can send you the variety names we used for each crop.
