I have been experimenting with fermenting vegetables at home and the results have been surprisingly good. The basic process is simpler than I expected. You submerge the vegetables in a saltwater brine and let them sit at room temperature for a few days to a week depending on the vegetable and your taste preference. The key is keeping everything below the surface of the brine to avoid mold. I use a small glass weight or even a clean rock wrapped in cheesecloth to hold things down. The salt concentration matters too. I aim for about two to three percent salt by weight of the water. Anything less and things can spoil. Anything more and it gets too salty. I taste test daily after the third day to see when the flavor and texture are where I want them. The first batch I did was cucumbers and they turned out crisp and tangy after about five days. I moved them to the refrigerator once they were done and they have kept well for weeks.
