So you asked about the park plan for this weekend and honestly it took me a=
 while to figure out the logistics because the west entrance is closed for =
paving and the north lot fills up by eight thirty on Saturdays. I talked to=

nd I will say the first attempt did not go as planned because I forgot to l=
et the sponge rest on the counter overnight. The dough came out dense and t=
he crust was more chewy than crisp. But the second try was much better. I u=
sed a smaller amount of yeast and added a little more water than the recipe=
 called for, and I let it sit in the mixing bowl for a full hour before sha=
ping. The oven spring was nice and the crumb had good structure. I also bak=
ed it in a cast iron Dutch oven with the lid on for the first twenty minute=
s, then off for the final fifteen, which gave it that crackly top. We ate i=
t warm with a bit of salted butter and some honey from the farm stand down =
the road. I think next time I will add a small handful of toasted sesame se=
