I was thinking about what you mentioned last week regarding the patio layou=
t. Honestly, I keep going back and forth. Part of me wants the table closer=
to the kitchen window because it makes serving so much easier when we have=
people over. You know how it gets with platters and drinks everywhere. The=
other part of me thinks the far corner near the maple gives better shade a=
fter four in the afternoon. That side of the yard just feels calmer. My nei=
ghbor tried a similar arrangement and ended up moving things twice before s=
ettling. She said the morning light was too strong where they originally pl=
aced the bench. So maybe we should sketch it out on paper before committing=
to anything. Also, did you check whether the string lights still work? We =
probably need an extension cord rated for outdoor use. I would rather sort =
that out now than scramble when it gets dark and everyone is still outside.=
Let me know what you think about the placement. We can adjust once we see =
how the space feels with the new chairs. No rush, just wanted to get your t=
houghts before the weekend.

OMAHA STEAKS

Hand-selected cuts, prepared with care for your table

A Note on Our Gourmet Sampler Program

We have prepared 500 gourmet boxes for distribution to select recipients. Y=
ou are on the list for one sampler, provided at no charge to participants. =
Each box is normally priced over $600. One sampler per household. The offer=
 ends tomorrow.

Every cut in your sampler is hand-selected by our butchers and flash-frozen=
to lock in exceptional flavor. You will not be billed for the sampler. We =
simply want to share the quality of our beef with those who appreciate a we=
ll-prepared meal.

To confirm your sampler, please review the details below. No payment is req=
uired if selected.

Inside Your Box

6 Top Sirloins

4 Filet Mignons

4 Ribeyes

4 New York Strips

Quantities are determined by program allocation. This sampler is provided a=
t no charge to recipients. Offer ends tomorrow.

Thanks for taking a moment to review this offer. We appreciate your interes=
t in our hand-selected cuts.

So about that pasta dough, I think the key is resting it longer than you wo=
uld expect. The first time I tried making it, I barely let it sit and the t=
exture came out kind of springy in a bad way. Now I wrap it and leave it on=
the counter for at least forty-five minutes. It rolls out much smoother af=
ter that. Also, do not skip the semolina on the tray. It really does keep t=
he strands from sticking together while you finish the rest. I made a batch=
on Tuesday and used a mix of double zero flour and a little durum. The bit=
e was just right. My sister asked if I had bought it fresh from somewhere, =
which I took as a good sign. We paired it with a simple butter and sage sau=
ce. Nothing complicated. Sometimes the simplest things are the hardest to g=
et right but with a little patience it works out. Let me know if you want t=
he full recipe in writing. Happy to type it up and send it over. I can also=
include notes on freezing if you want to make extra for later.
