So I was thinking about the new smoker someone brought up at the neighbor's=
cookout last weekend. He kept talking about how he seasons his brisket wit=
h just salt and pepper, nothing else, and lets it rest for a solid hour bef=
ore it even touches the grates. I asked him what kind of wood he uses and h=
e said mix of hickory and apple, two parts hickory one part apple. Honestly=
, I had never considered blending those two before. After he described the =
bark texture and the way the fat renders down near the point cut, I decided=
I need to just carve out a Saturday and try my own version. He said the bi=
ggest mistake people make is opening the lid every five minutes to check th=
e temperature, because that causes flare ups and dries out the outer layer.=
He recommended a remote thermometer with two probes, one for the chamber a=
nd one for the meat. We also talked about brining a turkey breast for the n=
ext time the family comes over, because baking it plain always turns out a =
little dry and no one wants that. I jotted down a rough plan on my phone wh=
ile we were standing by the fence, and my wife gave me that look like here =
we go again. But honestly, slow cooking is relaxing if you have nowhere els=
e to be and the weather holds. I might try a dry rub with paprika and brown=
 sugar next month.

View What's Inside

Every item included in this sampler reflects the same standard Omaha Steaks=
applies to all of its cuts. Each piece is hand-selected by our butchers an=
d flash-frozen shortly after processing to preserve the texture and taste y=
ou expect. When you receive your box, everything will be ready for your fre=
ezer until you are ready to cook.

The program is straightforward: if you received this email, your sampler is=
already reserved. There is no billing step and no hidden membership requir=
ement. The only restriction is one box per household address.

Thanks for taking a moment to review this announcement. We appreciate your =
continued interest in Omaha Steaks.

We were trying to pick a good date for the next club meeting and I think th=
e third Tuesday works better for most of us. The community room gets booked=
quickly during the summer, so I called the main office yesterday and they =
said the only open slots are after 6:30 in the evening. That actually lines=
up with when people get off work anyway. We will need to bring our own fol=
ding chairs because the room only has about a dozen of those hard plastic o=
nes, and last time a couple of them were wobbly. I picked up a projector re=
mote from the supply closet, but the bulb in the projector itself might nee=
d replacing since the image was kind of dim during the slideshow in April. =
I told Christine we could do a quick test run next Monday after lunch and s=
he said she would bring her laptop with the updated roster. The agenda was =
mostly final, but we still need someone to volunteer for reading the minute=
s and someone else to handle the refreshment signup sheet. I think Frank sa=
id he would do drinks if someone else brings the paper goods. Also, the par=
king situation is tighter than usual because they are repaving the west lot=
, so people should probably park on the street side or carpool. It might be=
easier to set up a group text to remind everyone the evening before. I tol=
d the front desk we would be done by nine at the latest.
