So Brenda asked me about the dinner menu for Thursday and honestly I told h=
er we should probably skip the risotto because last time it took forty minu=
tes of constant stirring and the kids were climbing the walls by the time i=
t thickened up properly. She said what about a simple roast chicken with th=
ose little potatoes that get crispy in the pan and maybe some green beans w=
ith lemon zest and toasted almonds if we have any left in the pantry. I thi=
nk that sounds way more reasonable for a weeknight. Also she wanted to know=
if we should invite the neighbors over for Saturday lunch and I said that =
depends on whether they finished their yard project because Mark mentioned =
they were putting in a new stone path along the side of the house. She laug=
hed and said that project has been going on since March and we should just =
invite them anyway and see what happens. Then we talked about her garden to=
matoes and how the cherry ones are coming in faster than she can pick them =
so she might roast a batch with olive oil and herbs to keep in the fridge f=
or sandwiches and salads through the week. I told her to save me a jar if s=
he decides to do that because those roasted tomatoes are incredible on toas=
ted sourdough with a little ricotta and black pepper. She said she would dr=
op some by on Friday if the weather holds and we can sit outside for a bit.=
Honestly that sounds like a good plan and I told her I would pick up some =
sparkling water and maybe a lemon loaf from the bakery on my way home from =
work. She reminded me that the farmers market moved to the north lot this m=
onth so I should check the schedule before driving over there. I said I wou=
ld look it up tonight and text her the details.

We also ended up talking about her son's baseball schedule and how the Satu=
rday games start early this season which means someone has to get the foldi=
ng chairs out of the garage the night before. I told her I still have her c=
amping chairs from the lake trip last year and she said I should bring thos=
e too in case the bleachers are crowded. Then she mentioned she found an ol=
d recipe box from her grandmother and there were some handwritten cards for=
apple cake and molasses cookies that she wants to try baking once the weat=
her cools down. I said count me in for taste testing and she seemed pretty =
excited about it. We left it at that and said we would figure out the detai=
ls over the next couple of days.

You know what I was thinking about the other day? How my coworker Dave keep=
s bringing up that recipe for braised short ribs and I finally asked him to=
just write it down because he was describing it in the break room and ever=
yone got hungry listening to him talk about the wine reduction and the way =
the meat falls off the bone after four hours in the oven. He said he would =
email it over but then he forgot and I had to remind him twice before he ac=
tually sent it. When I got it, the instructions were pretty straightforward=
but he left out the part about browning the meat first which I think is es=
sential for the flavor so I called him and he confirmed that yes you should=
absolutely sear the short ribs on all sides before they go into the pot wi=
th the vegetables and broth. We also talked about how the leftovers make ex=
cellent sandwiches the next day if you shred the meat and add a little hors=
eradish cream sauce with some pickled onions on a crusty roll. He said his =
family usually just eats it over polenta or mashed potatoes but the sandwic=
h idea sounded pretty good to him.

Then the conversation drifted to weekend plans and he mentioned he might ta=
ke his kids to the lake if the temperature stays above seventy. I told him =
we had been meaning to go for a hike at the state park but the trails were =
pretty muddy last time so we turned back after about a mile and went to the=
diner instead. He laughed and said that sounds about right and maybe we sh=
ould plan something together for the spring when the weather is more predic=
table. I agreed and said I would bring my portable grill if we do it up at =
the picnic area near the north entrance. He seemed into that idea and said =
he still has a cooler and a bunch of charcoal from the beach trip last summ=
er. We ended the conversation by saying we should actually follow through t=
his time instead of just talking about it and he promised to send me the da=
tes once he checks his work schedule for next month. I told him I would do =
the same and we left it there.
