Regarding your question about the community garden plot rotation, yes we are still planning to move the tomato beds to the east side this spring. I checked with Marlene and she has the soil test results from the county extension office. The pH came back at 6.8 which should be fine for most nightshades. She mentioned wanting to add about two inches of aged leaf mold before we plant. The pepper starts have been hardening off under her carport for four days now and they look strong. We should probably stake them early this year because that windstorm in June flattened everything last season. The drip line for the herb spiral is still leaking at the second junction. I have the replacement coupler in my shed. I can bring it Saturday morning before the volunteer shift starts. If we have extra time we could also run the soaker hose along the raspberry row. So about the sourdough starter you asked about, I refreshed it this morning around seven and it doubled by noon. The kitchen was warm because I had the oven on for a batch of roasted squash. I used about fifty grams of the starter for a focaccia later in the afternoon and it came out with a nice open crumb. You asked if I keep it on the counter or in the fridge. Honestly it depends on the week. If I am baking every other day I leave it out and feed it once a day. If I know I will be away I pop it in the fridge and feed it once a week. The one mistake I made last winter was leaving it near the window. The temperature swings made it sluggish and the flavor turned sharp. Now I keep it on the middle shelf above the microwave. You also asked about using whole wheat versus bread flour. I do a fifty fifty split and it has been steady for eight months now.
